During my time at Caprice Holdings Ltd (CHL) from May 1990 to October 2012, I worked on the following projects;-
1990 – Opening of The Ivy in Covent Garden as the Senior Sous Chef.
1994 – The Ivy achieves a Michelin Red M and accolades from Hardens and the Zagat guides.
1998 – The development and running of the Caprice Holdings Ltd Chef Training Programme.
2000 – Group responsibility for Food Safety and Health and Safety.
2001 – The incorporation of Signature Restaurants within CHL and my appointment as Executive Chef to run the 4 restaurants.
2004 – My appointment to Group Operations Manager.
2006 – The Ivy Kitchen, bar, stillroom and restaurant refurbishment works.
2006 – Scott’s, new opening.
2006 – Head Office relocation.
2007 – The incorporation of The Birley Group (Annabel’s etc) within CHL and my appointment to Operations Director, (Board position).
2008 – The opening of The Club at The Ivy over 3 floors, above The Ivy.
2008 – The opening of the J Sheekey Oyster Bar.
2009 – Harrys Bar, the complete replacement of all HVAC equipment.
2010 – The relocation of Head Office to incorporate aligning with Soho House Group.
2010 – The opening of The Mount Street Deli.
2011 – The refurbishment of the FOH areas of Le Caprice for its 30th Birthday.
2012 – The refurbishment of Scott’s kitchens, floors and bars.
Since establishing AKC
2013 – Leading Contract negotiations for my clients.
2013 – Sitting on the development team for several new restaurants in London.
2013 – Multiple kitchen designs for potential new clients of Adisa Kitchens.
2013 – Hosting a series of meetings to ensure the detailed planning of the upcoming closure works at The Wolseley.
2014 – Co-managing the closure and refurbishment works at The Wolseley.
2014 – Project managing kitchen flooring works at Colbert.
2014 – Assisting with the opening of Fischer’s restaurant.
2014 – Co-designing the kitchens of two of London’s most acclaimed new openings, (Barrafina Adelaide Street and The Palomar).
2014 – Co-developing and delivering a management training programme for ACT Clean

2016 – Developing and implementing Emergency Management Procedures across Corbin and King
2017 – Preparing The Groucho Club to operate a pop up food and bar offer at The Big Feastival
2017 – Colbert kitchen refurbishment, acting as the clients representative from concept through to delivery
2017 – Collaboration with Food Alert to develop Audit procedures for ACT Clean
2017 – Developing documentation review processes for ACT Clean, including; Method Statements, Risk Assessments, Health and Safety Policy, Lone working and Accident Investigation procedures
2017 – Designing the kitchens at Petersham Nurseries, a significant restaurant in Mayfair and the Food and Beverage facilities at a renowned London theatre
2018 – Designing the kitchens at the London Warehouse Hotel in Manchester, a healthy chicken restaurant in North London and the ‘Kindred’ project at Bradmore House, Hammersmith.
2018 – Ensuring that my clients are operating robust and diligent Allergy Information Systems.
2018 – Ensuring that one of my premium clients (with an excess of 1200 employees who carry out manual work), is operating a Best in class Accident Investigation Process.
2019 – Supporting The Sloane Club in Chelsea on Food Safety and Health & Safety matters.
2019 – Bistrotheque opens as part of Cultureplex in the London Warehouse Hotel in Manchester.
2019 – Bradmore House wins the ‘workspace interiors’ category at The World Interiors News Awards 2019.
2019 – Designing the Kitchens and service line for ATIS at their flagship store on Old Street.
I have organised many small works such as replacing items of worn mechanical kitchen equipment and have project managed many HVAC enhancements at my client’s sites.
Additionally, I have designed and overseen many temporary event kitchens.
