During my time at Caprice Holdings Ltd (CHL) from May 1990 to October 2012, I worked on the following projects;-
1998 – The development and running of the Caprice Holdings Ltd Chef Training Programme.
2000 – Group responsibility for Food Safety and Health and Safety.
2001 – The incorporation of Signature Restaurants within CHL.
2004 – Setting up the maintenance and contracts infrastructure for the group.
2006 – The Ivy Kitchen, bar, stillroom and restaurant refurbishment works.
2006 – Scott’s, new opening.
2006 – Head Office relocation.
2007 – The incorporation of The Birley Group (Annabel’s etc) within CHL.
2008 – The opening of The Club at The Ivy over 3 floors, above The Ivy.
2008 – The opening of the J Sheekey Oyster Bar.
2009 – Harrys Bar, the complete replacement of all HVAC equipment.
2010 – The relocation of Head Office to incorporate aligning with Soho House Group.
2010 – The opening of The Mount Street Deli.
2011 – The refurbishment of the FOH areas of Le Caprice for its 30th Birthday.
2012 – The refurbishment of Scott’s kitchens, floors and bars.

2017 – Preparing The Groucho Club to operate a pop up food and bar offer at The Big Feastival
2017 – Colbert kitchen refurbishment, acting as the clients representative from concept through to delivery
2017 – Collaboration with Food Alert to develop Audit procedures for ACT Clean
2017 – Developing documentation review processes for ACT Clean, including; Method Statements, Risk Assessments, Health and Safety Policy, Lone working and Accident Investigation procedures
2017 – Designing the kitchens at Petersham Nurseries, a significant restaurant in Mayfair and the Food and Beverage facilities at a renowned London theatre
2018 – Designing the kitchens at the London Warehouse Hotel in Manchester, a healthy chicken restaurant in North London, a modern fast and healthy restaurant and the ‘Kindred’ project at Bradmore House, Hammersmith
I have organised many small works such as replacing items of worn mechanical kitchen equipment and have project managed many HVAC enhancements at my client’s sites.
Additionally, I have designed and overseen many temporary event kitchens.
